if we didn't have preservatives people would cry about the higher prices and how their food would spoil.
A lot of the drama regarding food preservation is done because of security concerns.
To be honest, most food can be canned using plain water, salt and a high preasure environment, but typically some regulatory body will demand your canned cucumbers get preserved in an acid environment at X PH and with Y concentration of salt - in order to prevent pathogens from growing in the food. At that point you pretty much need to add acidity correctors and other extras to the food because it would taste like lightning otherwise.
A whole lot of chemo in food does not make much sense, on the other hand.
You could have food distributed without preservatives in many cases, but people would need to switch their mentality regarding canned and vaccuum sealed food. We'd have to go back to the late 19th century days, in which you had to actually boil your canned food before it was remotely safe to eat. That's just not going to happen.
